Default Harlequin shrimp?

I just got a harlequin shrimp today and it has already gotten to my sand sifter star. I already new this was going to happen, and my fish store said i could feed them chocolate chip stars to them also. i was just wondering how often i would need to buy one of these choc chip stars to feed him well. Also i do need to remove the dead star after they feed correct?
