Default Cycling New Setup

I have just started (literally 24 hrs ago) a saltwater aquarium in 55 gal tank with 25 lbs of live rock & 3 inch live sand bed. I noticed that when testing the water today that everything seems to perfect.

Ammonia -0
Nitrate - 20
Nitrite - .50
Buffer capacity - 120
pH - 7.2

Has the tank not started to cycle yet? Also how do you know if there is any die off on the live rock?

Your levels are nowhere near perfect (not being rude). Ammonia should be 0, nitrite 0, nitrate - below 10. Your alkalinity (buffer capacity) should be somewhere between 70 and 110 and your pH should be between 8.0 and 8.4. I doubt your tank has even started to cycle yet, those chemicals probably came over from the live rock/sand.

Die off will give a somewhat rotten smell to the water and you'll most likely be able to see it. Good luck with it....ask questions! We're happy to help!
