Default Question about dussumeri tang?

So my dussumeri tang is doing great but has been showing some odd behavior. He swims to the surface of the water in the corner of my tank gulps air from what it looks like, then goes to the substrate and eats larger peices of the crushed shell? Has anyone seen or does anyone know what this might be? He also it pooping what looks to be pieces of shell or calcuim also lol, i jsut dont get it?
I have a protein skimmer rated for a 250gal tank on the 120 and i know the oxgyen lv is good. None of the other 3 tangs do this behavior at all jsut wondering what it may me.
The dussumeri tang eats good and acutally looks to be growing. I did notice tht he's changing coloration going from his juvinelle stat to more of his adult look, would this have anything to do with it or not?
